A Culinary Legacy Rooted in India
From Taj Palace to Canada

Patson Massey’s journey began in his teenage years in New Delhi, India, where he worked grueling 12-hour shifts at the prestigious Taj Palace Hotel, peeling onions, observing senior chefs, and slowly mastering the foundational skills of traditional Indian cuisine.

After completing his formal chef training at the five-star Taj Palace, Patson worked there as a professional chef for eight years before making the life-changing move to Canada. In Toronto, he continued refining his craft as a specialty chef for almost a decade, building a reputation for quality and creativity.

The Dream Becomes Reality

Although Patson had always dreamed of opening his own restaurant, it was his wife Anisha who helped bring the dream to life. “She encouraged me, believed in me, and pushed me out of my comfort zone,” recalls Patson.

In 2005, the couple chose to plant roots in London, Ontario, drawn by its welcoming community, great schools for their daughters, and wide-open spaces. Together, they opened Massey’s, driven by a passion for food and the desire to share authentic Indian flavors with a new audience.

From day one, Massey’s has been a true family-run restaurant. Anisha has managed operations with dedication and love, while Patson leads the kitchen with passion and precision. They often joke that they’ve spent more time at the restaurant than at home — and it’s true. Massey’s has become an extension of their family, a place they’ve nurtured for nearly 20 years.

Anisha believes deeply in the emotional connection of hospitality. She knows many regular guests by name and remembers their favorite dishes. “I’m old-fashioned,” she says. “I love connecting with people.” This devotion to personal service is a big part of why guests return again and again.

Every curry, every masala, and every naan at Massey’s is made from scratch daily. Patson carefully blends and roasts spices using techniques passed down from his mother and perfected over decades. “My mother’s cooking still influences every dish I make,” he says. His attention to detail and respect for tradition create flavors that transport diners straight to India.

Having spent more than 30 years in the kitchen, Patson sees himself not just as a chef but as a custodian of Indian culinary heritage. One of his dreams is to pass on this legacy — along with the little secrets of spice blending — to future chefs, keeping the traditions alive and evolving.

A Culinary Journey — From India to Canada

After training and working at Taj for 8 years, he moved to Canada and spent another decade refining his skills. The dream was always to open something of his own. With support from Anisha, that dream came true.
